Breakfast Service

Our breakfast service is in the private dining area of the suite's great room. The windows provide views of beautiful sunrises, blue skies, and sunshine most days of the year.

We serve breakfast at 7:45am weekdays and 8:30am on weekends, unless otherwise arranged.

Enjoy a hearty and healthy set menu of home-style cooking. Elizabeth View’s own organic apple sauce, ginger cake, granola, and signature Rhubarb & Pecan Muffins are popular staples. Alternatives such as French toast or scrambled eggs and toast appear some mornings as well.

Each breakfast includes fresh fruit, quality juice, and hot drink selections.

Signature Muffin Recipe - Rhubarb Pecan Muffins

Directions: 350 degrees F; 30 minutes
  1. Prepare a muffin tray by lightly oiling 10-12 muffin tins. Set aside.
  2. In a small bowl, combine the rhubarb and sugar and set aside.
  3. In a medium-size mixing bowl, combine the flour, baking powder, nutmeg, cinnamon and salt. In a separate bowl, combine the oil, maple syrup, vanilla, vinegar, milk and lemon rind, and whisk together until emulsified. Pour the wet ingredients into the dry ingredients and gently stir together, being careful not to over mix. Fold in the rhubarb and sugar mixture, then add the pecans.
  4. Scoop spoonfuls of the mixture into prepared muffin tins, filling each tin level. Place the pan in a preheated oven and bake for about 30 minutes. Remove from the oven and allow the muffins to cool for 10-15 minutes in the pan before gently lifting them out of the tin.

Makes 10 - 12 muffins.

  • 1 1/2 cups rhubarb stems, sliced
  • 1/2 cup cane sugar
  • 1 1/4 cups spelt flour
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp fine sea salt
  • 1 tsp cinnamon
  • 1/3 cup canola oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 2/3 cup almond or soy milk
  • 1 tbsp lemon rind
  • 1/2 cup pecans, finely chopped
